Recipes: Healthy School Lunches

Healthy school lunches are very important towards the success of kids at Whitman. Here are some ideas for lunches that are perfect for school:

Quick and Easy Lunches:

BLTA Wraps: This is an excellent twist on the classic BLT. All you need is a whole wheat wrap to spread the avocado on, crumbled bacon (not too much!), chopped tomatoes and thinly sliced romaine.

Turkey-Cheese Pita Pockets: For this wonderful take on the classic sandwich, spread a nice, creamy cheese on the inside of a whole wheat pita and then fill it with spinach leaves, cucumber slices and roasted turkey slices.

Strawberry and Cream Cheese Sandwich: Spread some reduced-fat cream cheese on whole wheat or multigrain bread, and then put sliced fresh strawberries between the two slices of bread.

More Involved Choices:

Arnold Palmer Sandwich: Combine finely chopped hard-boiled eggs and pickles with mustard or mayonnaise and then spread it on a slice of multigrain bread. On the other slice, combine drained canned tuna, finely chopped celery and onion, mayonnaise and lemon juice. Then sprinkle with torn basil leaves and assemble.

Ham and Cheese Quesadillas: Spread mustard on a whole wheat tortilla, top with slices of Jarlsberg cheese and ham and heat the sandwich on a skillet or Panini press. (If you’re in a rush, the microwave can work, too). You also have the option of adding a layer of baby spinach. Don’t forget to let it cool before slicing and packaging it!

A Healthy Snack Idea:

Chocolate Banana Grahams: This snack is an excellent way to satisfy your sweet tooth. All you need to do is spread a little bit of Nutella on a graham cracker, and then slice a banana and add coconut shavings.
